Cucumber-Yogurt Dip

1-1/2 cups plain Greek yogurt
3 tbsp fresh dill, chopped
2 tbsp fresh mint, chopped
2 tbsp fresh chives, chopped
1 garlic clove, minced
1/2 tsp salt
2 cups seedless cucumbers or cukes with seeds removed
   (peeled, washed & grated)
1/2 tsp black pepper
fresh dill sprigs

Combine yogurt, chopped dill, mint, chives, garlic and salt. Stir mixture well, cover and let sit for 15 minutes in refrigerator (or refrigerate overnight). Before serving, fold in the grated cucumber and sprinkle the dip with pepper. Garnish with a slice of cucumber and dill sprigs. Refrigerate any leftovers.

Try serving with warm soft pretzels or as a veggie dip with carrots, celery and bell pepper, or use as a spread for sandwiches.
