I bought a nice big bag of peaches at the farmer’s market last week. I cut them up and made a yummy peach cobbler earlier in the week and by yesterday I still had lots of cut up peaches that I needed to do something with. I happened on a recipe for peach butter and decided to try that rather than making peach preserves. What a nice treat this was!

Here’s the recipe I got from smittenkitchen.com:

4 lbs. peeled sliced peaches
1 cup water
2 cups granulated sugar (I reduced the sugar to 1.5 cups)
Juice of 1 lemon

Put all ingredients in a large pot and bring to a boil. I reduced the heat to medium and let them cook for about 45 minutes. To speed up the process of turning them into a puree consistency I used an immersion blender.

Warm right off the stove, we had some for lunch with biscuits and home-made tomato soup. It was such a treat on a rainy day!
