Pickled peaches were a delicacy served at Christmas and Thanksgiving dinners at both my grandmothers’ houses, and the whole family loved them. Can some of these when peaches are in peak season!

36 peaches, peeled, cut in half and stone removed
1 clove placed in each whole peach
Pack them in a large roaster

Prepare a syrup of
4 cups sugar
juice of 4 lemons
1 cup water
2 sticks cinnamon
red hot cinnamon candy, if desired, for color & extra zest

Boil the syrup about 15 minutes, pour over peaches and cover; bake 1-1/2 hours at 275 degrees.  Carefully spoon hot peaches in jars, cover completely with hot syrup and seal in hot sterilized jars.
