Here’s a basic muffin recipe that can be changed up simply by adding 3/4 cup of fruit and/or nuts before adding the wet ingredients.

2 eggs, lightly beaten
1 cup milk
1/4 cup butter
2 cups sifted flour
3 tsp baking powder
1/2 tsp salt
2 tbsp sugar

Sift together the dry ingredients. Add the wet ingredients and blend quickly. Pour into well-greased muffin tins and bake 20 to 25 minutes at 425 degrees.
