Don’t have buttermilk? You can use regular whole milk instead. Of course, then they’re just biscuits.

2 cups flour
1/2 tsp salt
2 tsp baking powder
1/2 tsp baking soda
5 tblsp  softened butter
1 cup buttermilk

Sift together flour, salt, baking power and baking soda. Cut in butter, mix until it resembles coarse crumbs. Add buttermilk, stir until dough follows fork around bowl. Turn out on floured surface and knead for 1/2 minute. Roll to 3/8″ thickness. Brush dough with melted butter; fold over and cut with biscuit cutter (or juice glass). Bake in hot 450 degree oven for 12 to 15 minutes. Makes 2 dozen small biscuits.
