The local waffle type in Brussels

My grandson Jeffrey is a fanatic when it comes to waffles. He especially likes it when I come up with a new variety of waffle or something different to top them with. Here’s a basic recipe, but feel free to change it up by adding powdered fruit, mashed sweet potatoes, chocolate chips, 2 tsp lemon or orange zest, nuts, you name it!

2 cups flour (sifted)
3 tsp baking powder
2 tsp sugar
3 eggs
1/14 cups milk
4 tablespoons melted butter
1/2 tsp salt

Sift together the flour, salt & baking powder 3 times. To a bowl containing well-beaten eggs, add four alternately with milk. Add butter & stir. (Add optional ingredients last)

Pour into hot waffle iron.
