MEAT GRAVY

1 tbsp fat from pan (let us just call this meat drippings)
1-1/2 tbsp flour
3/4 cup milk diluted with 3/4 cup hot water
salt & pepper to taste

Blend fat from pan and flour together. Add diluted milk slowly and stir until thick. Strain if lumpy.

WHITE SAUCE (White Gravy)

2 tbsp butter
2 tbsp flour
1/2 tsp salt
Pepper & Paprika
1 cup milk diluted with 1 cup meat stock or water

Melt butter, blend in flour and seasonings. When smooth and bubbling, add the diluted milk gradually, stirring constantly to prevent lumping. Cook 15 to 20 minutes. Makes 1-3/4 cups.

HORSERADISH SAUCE

2 tbsp prepared horseradish
1 tbsp meat stock
1 tsp Worcestershire Sauce
1-3/4 cups White Sauce

To hot White Sauce (see above) add all ingredients. Serve with short ribs or beef or pot roast.

CHEESE SAUCE

1/2 cup grated cheese
dash pepper
dash paprika
1-3/4 cups White Sauce (see above), heated

Stir cheese into heated white sauce, blend until melted. Serve over macaroni, rice or on toast. Serves 6
