Here’s how they did it before we just started buying boxes of dried noodles.

1 cup flour, sifted
2 eggs
Pinch of salt

Beat eggs, add sifted flour. Knead well, chill 30 minutes or longer. Roll into thin sheets, place on cloth until quite dry but not brittle. Roll, cut very fine. Have broth nicely seasoned and boiling. Drop in noodles, cook 5 to 10 minutes.
