A steamed tail-on shrimp.

I always, always have a bag or 2 of shrimp in the freezer for nights when I need a quick dinner. No long thawing process is needed; just put them in a bowl and cover with cold water. Five or 10 minutes later, dump that water and cover with more cold water. In 5 minutes or so the shrimp are thawed but still chilled.
